Hubby scheduled a car apt for me for Thursday. So apparently I am all about appts today. Hubby is on a low/no carb eating plan right now. I want to celebrate cinco de mayo with some food. So I am looking up recipes as we speak to see what I can come up with. I am thinking a Mexican version of cabbage rolls to create a kind of veggie enchillatas. finished up my baby book yesterday. I need to finish the other mini I created, just need to paper and embellish it. @Lynn, Any word yet? My problem is no tortillas, no chips, no nothing good!! We had a great meal. Mexican cabbage rolls. it was quite involved. But I pulled hubby into the kitchen to help wash and chop the veggies. Hubby really enjoyed it. he sometimes feels like the food he eats now is so plain and ordinary. He loves Mexican food. He was in hog heaven.
