The restaurants in our complex have a noon time buffet for the July 4. Since we often don't get up before noon, we tend to skip all such noon time offerings. Our plan for tomorrow is to go to Popeye's. It is not something we do often and the food is quite different from the typical fare in the restaurants here. Of course, we get it spicy. Like you, we have oil spritzers -- one olive oil, the other peanut oil. Gail does use Pam at well. MMMMM----- Recipe via Meal-Master (tm) v8.05 Title: Mango Lime Chicken Categories: Tested, Broiled Yield: 2 Servings 1 lg Boneless chicken breast (12 or more oz) 1 c Defrosted mango chunks 3 tb Fresh lime juice (1 lg lime) 2 tb Thai fish sauce 2 tb Oil (neutral tasting) 1 tb Brown sugar 2 ts Sriracha 3 lg Cloves garlic coarsely chop 1/2 ts Kosher salt Combine mango, lime juice, fish sauce oil sugar Sriracha garlic and salt in a blender, puree to form a smooth marinade. Tranfser to a quart size zip top bag. Add the chicken and seal, pressing as much air out of the bag as possible. Massage to coat, then refrigerate for at least 4 hours and up to-overnight. Position an oven rack 4 - 6 inches from broiler element,preheat the broiler. Spray rack with Pam, cover pan under rack with foil. Place chicken on the rack allowing some marinade to cling. Broil for about 8 minutes then using tongs turn the chicken over and spoon more marinade on the second side. Discard any remaining marinade at this point. Broil for another 9 to 10 minutes until lightly charred around the edges and the chicken is cooked through.
