Most of the time I'll use just soured milk in baking but, depending on the recipe, I might buy and use buttermilk. Checked out some recipies for Okracoke Fig Cake since we've so many figs this year; one specifically said to use buttermilk, not just soured milk. If I make a fig cake, I'll post the recipe but meanwhile, it looks like I'll make another batch of jam (plus figs for eating "as is"); the tree is quite prolific this year.
