Subj : Bottle Gourd Curry To : All From : Ben Collver Date : Sun Sep 03 2023 10:18:06 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Bottle Gourd Curry (Lawki Curry) Categories: Indian, Pakistani Yield: 1 Batch 1 Bottle gourd; (Lawki); long -& thick, peeled and sliced -in thin rounds 2 Red chillies; (Lal mirch); -or to taste 2 Green chillies; (Hari -mirch); chopped, or to -taste 1 bn Fresh cilantro; (Hara -dhania); chopped, for -garnish 1 tb Ginger; (Adrak); chopped --OR- 1 tb Ginger paste; heaping 2 ts Cumin seeds; (Saabut sufaid -zeera) 1 ts Mustad seeds; (Rai) 1 ts Turmeric powder; (Pisi -haldi) 1 tb Curry powder 1 tb Cooking oil In a kadai or pot heat oil until well hot. Add in the cumin seeds. Fry for a minute or until the cumin seeds get brown. Then add in the red chillies, mustard seeds, curry powder. When the mustard seeds start to crackle add in the green chillies and ginger and fry for a minute. Now add in the bottle gourd slices and turmeric powder and fry for 5 minutes. Then add in the salt, mix well and cover the pot. Let it cook covered on a low flame for about 15 minutes or until the bottle gourd is cooked well.
