Subj : Chinese Cordyceps Flower Chicken Soup To : All From : Ben Collver Date : Mon Nov 20 2023 12:18:07 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cordyceps Flower Chicken Soup Categories: Chinese, Soups Yield: 5 Servings 1/2 Chicken; (600 g); cut into -big pieces 10 g Cordycep flowers 30 g Huai Shan; (Dried Chinese -yam) 6 Dried scallops; soak for -about 20 minutes or until -softened; (retain the water -for the soup) 3 tb Goji berries 6 c Water; or use just enough to -immerse all ingredients Prep time: 10 minutes Cook time: 2 hours Total time: 2 hours 10 minutes This delicious and aromatic cordycep flowers chicken soup is excellent for both children and adults. It replenishes energy, improves eyesight and builds up immune system. Blanch chicken in boiling water for 2 to 3 minutes. Rinse and set aside. Rinse all dried ingredients. Place all ingredients (except the goji berries) into a soup pot. (I used a claypot). Bring to a boil, then reduce to low heat and simmer for 1-1/2 to 2 hours. Add goji berries in the last 10 minutes of cooking. If you like the goji berries to be very soft and broken, add them right at the beginning of cooking. Season with salt if necessary and serve. (I didn't add any salt into the soup as I found it adequately flavorful.) Notes: Remove skin from the chicken if you do not want a layer of oil in your soup.
