Subj : Grilled Tandoori Lamb Chops To : All From : Ben Collver Date : Wed Mar 13 2024 13:19:45 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Grilled Tandoori Lamb Chops Categories: Indian, Lamb Yield: 12 Chops 1 tb Tandoori spice blend 1/2 tb Kashmiri chili powder or -cayenne pepper 1 ts Turmeric Kosher salt 12 Butterflied lamb chops 2 c Full-fat yogurt 2 tb Milk 1/4 c Tomatoes; minced 1/4 c Cucumbers; minced 2 tb Mint; minced 1 pn Sugar Grilled flatbreads; for -serving MMMMM--------------------TANDOORI SPICE BLEND------------------------- 1 Part ground cumin 1 Part garam masala 1 Part turmeric 1 Part fenugreek 1 Part chili powder MMMMM-----------------------TANDOORI PASTE---------------------------- 1 1/2 tb Garlic; minced 1 1/2 tb Ginger; minced 2 tb Fresh lime juice 2 tb White vinegar Mix together 1 tb Tandoori Spice Blend, 1/2 tb Kashmiri chili powder, 1 ts Turmeric, and salt. Mix together Tandoori Paste. Marinate lamb chops in Tandoori Paste for about 30 minutes. The meat gets a rub of garlic, ginger, turmeric, chili powder and tandoori spice blend. (If you don't have this blend on hand, mix up equal parts ground cumin, garam masala, turmeric, fenugreek and chile powder.) On the grill the punchy rub quickly forms a crisp crust; pull the chops off the heat while their interior remains rosy pink. Raita, the cooling yogurt sauce thick with cucumber and tomato, tempers the spiced lamb's heat.
