Subj : Hatch Chile And Corn Fritters To : All From : Ben Collver Date : Tue Jul 09 2024 08:57:40 MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Hatch Chile And Corn Fritters Categories: Corn Yield: 4 Servings 3 c Fresh or frozen corn 4 Eggs 4 Green onions; thinly sliced 4 Hatch chiles (1/2 c); -roasted and peeled 1 c Jack cheese; grated 1 c Flour 2 tb Corn meal 1 ts Old Bay seasoning; see notes 1 ts Salt 1 1/4 c Corn oil Preparation time: 15 minutes Cooking time: 15 minutes Hatch Chile and Corn Fritters! Fresh corn, fragrant fresh hatch chiles and a "secret ingredient" combine in this easy a pan fried fritter! Place corn kernels in the bowl of a food processor and process until coursely chopped. Transfer to a large bowl and add the eggs, chiles, onions and cheese. Stir until thoroughly combined. Add the flour, cornmeal, Old Bay and salt. Stir until incorporated. In a large skillet, heat the oil over medium high heat. When the oil is hot (it should be shimmering) add a tb of the batter and slightly flatter it out. Add 3 or 4 more tb to the pan, making sure that the fitters don't touch. Cook for 3 - 4 minutes until the fritters are golden brown at the edges. Carefully flip them over and cook on the other side.
