Though they are often used for rather utilitarian purposes -- various sorts of servers, for example, home automation, entertainment servers, the sorts of set-and-forget stuff that requires little user intervention and can be run headless. Being tiny and consuming very little power, you can stick them in a corner or the back of a wiring closet and walk away. They're also frequently used in nerdy-geeky DIY projects like robots, retro-gaming (e.g., recreating video arcade consoles and GameBoys), build-you-own laptops and cellphones, even remote-controlled coffee makers.
