# Bread (Soda Bread/Quick Bread) Yields: One loaf (flatbread) for 1 person. Time: About 45 min. (Preparation + Baking) ## Ingredients 2 Cups of flour (wheat or spelt) 1 Teaspoon of baking soda 1/2 Teaspoon of salt 2 Cups of buttermilk (~ make it a pint and take a good sip on my health before starting) ## Preparation Part 1 - Preheat oven (190 deg. C) - Put all dry ingredients in a bowl and mix them. - Add the buttermilk. - Stir until everything got soaked with buttermilk. ### DON'T KNEAD THE DOUGH! This dough is rather liquid. Don't be surprised. It's supposed to be that way. Don't add anything to make it thicker. Just stir it. Fold your bakery paper in a way, that the dough doesn't flow over the rim of your sheet pan/baking tray. ## Preparation Part 2 - Fold bakery paper. - Put folded bakery paper on your sheet pan. - Pour the dough on the sheet. - Bake in oven for 30min. ## Is It Ready? - Baking time is normally between 20 and 45min. - It is ready if the bread sounds hollow when tapped on. - Start tap-testin after 30 min. ## When It's Ready... ... put your bread into an oven/tea-towel while it's cooling down. According to tradition this will take out the baking soda taste. Test, whether tradition got it right. # Variants ## Whole-Grain Use whole grain flour from wheat or spelt. Don't use rye for the leavening agent won't work. ## Roman Add laurel leaves to the dough. Combine with coriander seeds (XOR coriander powder) and black caraway. ## Kefir Use milk based kefir instead of buttermilk. You probably need 2 + 1/2 cups because kefir contains less water than buttermilk. # Your variant?
