I do run out of energy often, though. One of the casualties of my slow-down has been normal meals. I’ve found I can cook once and eat all week. So today I’m going to start with a few of the things that show up as encores on my table, and then I’d like to hear how the rest of you manage to cook-once-eat-twice (or more). Some of these recipes are vegan or vegetarian. Monday I baked a chicken, a really big one. That meant chicken for that day’s protein meal, and then I divided up the rest to get me through the week. Tuesday I made fajitas, and reheated the rest for Wednesday. Okay, I love fajitas, so I made more on Thursday, and reheated the rest on Friday. I’d have made even more but I was out of peppers, so yesterday it was chicken and rice (I considered chicken and noodles, but the rice won since I had celery on hand). And there’s enough for today and tomorrow. After that? Depends on what’s in the freezer. When I make ciabatta rolls, those split to become mini onion and mushroom pizzas. The toppings go in the microwave for a few seconds, then I top the split rolls with marinara and toppings, and mozzarella, and toast in the air fryer for 2-3 minutes. Leftover roast can be shredded to make enchiladas. Those are favorites, too. Or shredded beef tacos, if I have the shells. This is way better than barbecue, if you ask me. (Did you ask?) And let me tell you about the new plant-based meatballs! On my daughter’s recommendation, I tried the Impossible brand. The main problem for many vegetarians or vegans may be how much they actually taste like meat, so it may be a bit off-putting. I, on the other hand, found them awesome in a “meatball” sub. Once again, a bit of Italian bread, marinara, and the meatballs. Top with cheese if you want, and broil in the air fryer for 3 minutes. There are 14 meatballs in a bag, so that’s lunch for a week. Taffy wakes me up if she thinks I’m sleeping too long. She wants me to start the biscuits because she always gets a spoonful of cream. She’s almost 19, so whatever Taffy wants, Taffy gets. McGee is here on the kitchen counter. He wants cream, too. And anything else that’s edible. He’s not picky. Chaucer is a ginormous Maine coon who has just discovered that cream is handed out every morning in the kitchen. I have a recipe for tender cream biscuits. I mix the dry ingredients, enough for the week, and then each morning I just measure out enough for my breakfast and add warm cream. And bribe the cats with a dollop of cream each, so they’ll let me get on with it. So how do you, especially those in one and two person households, manage meals?
