That was for a dozen Red Beet Eggs, but it was easy to cut in half, and six large eggs plus sliced beets from a 15-oz. can fit perfectly in a one-quart Ball jar. (I did have some of the beet juice pickling liquid left over.) Please note that you don’t have to cook the beets with the vinegar mixture — I didn’t, and most other recipes I looked at didn’t either. Those canned beets are already cooked, and they’ll absorb some of the vinegar flavor in the fridge. Besides, you will want to layer them in with the hard-boiled eggs in the jar. Then you pour in the hot beet juice concoction, let it cool, and refrigerate for 3 days. Mine were perfect on the third day, and looked like the ones in that tweet. Pro tip: Red beet eggs are a good way to repurpose flavor all those Easter eggs your kids or grandkids found. Beryl, btw, made deviled eggs out of hers. I tried that, and it’s good, but I liked them even better as egg salad (dressed simply with mayo, salt, pepper). Recipe is in the YouTube description.
