What's For Dinner? v18.02 -- Sole with Grapes [1] ['This Content Is Not Subject To Review Daily Kos Staff Prior To Publication.'] Date: 2023-07-15 Someone recently mentioned cooking sausage and grapes, here’s some fish and grapes. I got this cookbook back in the 1980s and have made this recipe occasionally ever since. Here on the west coast the best fish for this recipe is Petrale sole. Sole with Lemon Butter Sauce and Grapes From Thirty Minute Meals - for 4 This recipe will work with other mild white fish, but thicker fillets will need to cook longer. 1¼ pounds sole fillets ½ cup flour seasoned with ¼ teaspoon salt and 1/8 teaspoon freshly ground black pepper 1 tablespoon each butter and oil ¼ cup each butter, lemon juice and minced fresh parsley ½ teaspoon thyme 1 cup seedless grapes Dredge fillets in seasoned flour. Heat oven to 200º and warm serving platter. In a large skillet over medium-high heat, melt the 1 tablespoon butter with the oil. Sauté the fillets, rounded side first, until a deep golden color, about 1½ minutes per side. When ready to be turned, the edges of the first side will become opaque and curl slightly. When done, the second side should flake easily with a fork. Remove fish to platter and keep warm in oven. Wipe out pan, return to heat, and add the ¼ cup butter. When it is melted and starts to brown, add lemon juice, parsley, thyme and grapes. Stir 1 minute to heat grapes and pour sauce over fish. Dinner plan here is chicken satay and Thai zucchini salad.
