But maybe this week I will simply post a few recipes. As you can see by Itzl's concerned look, this group is for us to check in at, to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wildfires, hurricanes, tornadoes, power outages, or other such things that could keep us off Daily Kos. If you're not here, or anywhere else on Daily Kos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we are going to check up on you. Okay, here we go. Tuna salad: In a large mixing bowl, dump: 6 cans of tuna 1 whole 16 oz jar of sweet relish about half of a 16 oz bottle of ranch dressing squirts of mustard squirts of Worcestershire sauce stir and stir and stir. Eat it on whole wheat bread, or whatever bread you got free, or on crackers you got free. Baked beans, inspired by Tonia: In a big glass casserole dish, dump: 4 cans of pork and beans 1 24 oz can of pork, that has all the fat included generous pouring of sorghum syrup (or about a cup of brown sugar) squirts of mustard squirts of Worcestershire sauce shakes of iodized salt shakes of Cajun spice shakes of Accent Bake in the oven at about 300 degrees, for about 20 or 30 minutes. Minestrone stew: In a five quart pot, dump: 1 pound of Imperial spread whatever bulk veggie you got free: zucchini, sweet potato, cabbage, squash, etc. carrots, fresh, frozen, or canned tomatoes, either diced, canned diced, paste, tomato soup, (a 28 oz can of Ro*Tel is great) canned beans of any kind, including refried beans green beans spinach vinegar salt pepper molasses or sorghum syrup or brown sugar Accent Knorr chicken bullion one half of one habanero pepper Cook on low heat until your fresh veggies are soft enough to eat. Oatmeal blueberry muffins: 1 cup milk ¼ cup vegetable oil 1 egg 1 ¼ cups quick oats 1 cup flour 1/3 cup sugar 1 tablespoon baking powder ½ teaspoon salt 1 cup blueberries I have been using combinations, like baking soda and lemon juice, in place of baking powder, because most baking powder has aluminum in it. I read, years ago, that autopsies of those who died from Alzheimer’s had aluminum built up in the brain. The combinations are a challenge, because of trying to get the measurements just right, but I am learning. I think I saw aluminum free baking powder at Walmart, but there is none at the nearby dollar General. And, I have lots of baking soda, and I enjoy experimenting with those various combinations. You can look it up, on the internet, if you want to try it. The directions for the muffins call for using two different mixing bowls, one for the dry, one for the liquid. Then you put them together. Then you add the blueberries at the end. I had frozen blueberries, for the first two batches of this. I now have dried blueberries. Four pounds of dried blueberries. I am not sure if I will simmer them in water first, to use them, or try them as is, and hope they soften as they cook. But oatmeal is said to be super healthy, and blueberries are said to be super healthy. So, this is a treat that should be super healthy. In my recent batch of free food, I got a box of Maypo brand quick oats. Here is the recipe printed on the box, that I plan to try soon: Baked Oatmeal: 1 cup packed brown sugar 2 tsp baking powder 1 tsp salt 1 tsp ground cinnamon 2 eggs 1 cup milk ½ cup butter, melted 3 cups quick oats Okay, comparing that to the recipe above, this one has no flour, but has 3 cups of quick oats. So, maybe I will simply use this recipe, and add my blueberries, and make muffins this way. Ha! Now, I will tell you story of the nuts. I recently got, for free, four pounds of dry roasted almonds, and two pounds of walnuts. I had on hand a very old, large, hand crank meat grinder that a neighbor gave me, months ago, as she was downsizing. I tried using that. It was simply too hard to crank. I threw it in the trash can. About a year ago, I bought me a small hand crank meat grinder. I used it back then on a batch of dry roasted peanuts. It worked on those peanuts, a year ago, but for these almonds, it was way too hard to crank. I threw that in the trash can, as well. I got out my Ninja blender. I put about a cup of vegetable oil in the blender, then a two-pound bag of almonds. It worked well. I did that again with the other two-pound bag. Then I did the walnuts, with no oil, since they are way softer. Now I have four, one-quart jars of ground nuts, two with almonds, two with walnuts. What kind of recipe should I look up now? Maybe a recipe for oatmeal and nuts and blueberry muffins? www.allrecipes.com/… Ingredients 1 ½ cups oat bran 1 ½ cups all-purpose flour ½ cup packed brown sugar 2 teaspoons baking soda 2 teaspoons baking powder 1 teaspoon ground cinnamon ½ teaspoon salt 1 ⅛ cups applesauce ½ cup egg substitute 2 tablespoons canola oil 1 teaspoon vanilla extract 1 ½ cups blueberries ¼ cup chopped pecans ½ cup low fat granola Okay, that recipe has many things I do not agree with: Oat bran? No. Flour? No. Egg substitute? No. Looks like I will likely take elements from all three of those recipes. We will see how it turns out. Anyway, take care of yourselves, and each other.
