Oatcakes. - joneworlds@mailbox.org Oatmeal, flour, sugar, salt, baking powder, butter or margarine, water. Heat oven to 325F. Mix 1+1/3 cups oatmeal, 1/2 cup flour, 3/4 tsp sugar, 1/4 tsp salt, and 1/4 tsp baking powder. Melt 1/4 cup of butter or margarine, and mix it in until evenly distributed. Add 1/2 cup hot water and mix just until moistened. Form dough into a ball and add more flour or water until it's rollable. Add 2 tbsp oats to table and roll dough out 1/3 inch thick. Use a coffee cup to to cut round cakes from the dough, and with a spatula transfer them onto a parchment-paper lined baking sheet. Gather up the scraps and keep rolling and cutting cakes until it's all gone. Bake about 30 minutes until becoming golden brown. Cool the cakes on a wire rack. Eat with jam and cheese.
