I made little egg bites this morning for future protein snacks. mini muffin pan is the secret. 12 eggs, 1 lb flavored turkey meat (I used taco flavored), 1 red pepper, 1 green pepper, 1 large onion. Brown meat + onions and drain fat. let cool. mix in bowl with chopped peppers and eggs. spoon into greased mini muffin tins. 350 degrees for 15 minutes. let cool.
