^always use a temperature lower than you think you need. don't be afraid to let it sit, but any temperature higher than medium, you have to stir, stir, stir. I'll take 15 minutes to make a grilled cheese. I set my electric to 4. 10 minutes on the first side, 5 on the other side. Do the same with meat. Lower and slower. Save the fancy grill marks, fat melting, carmelizing for the last 5 minutes.^
