Chilli Paneer An Indo-Chinese dish There are several recipies but this one is the best that I've made. Sanjuro 2016, Modified from a recipie at VahRehVah Recipie give or take; Go get a big wheel 425g or so of queso blanco, Vaquero brand is my choice. Alternatively you can make your own paneer which I have done in the past but it's time consuming. Cube the cheese. In a mixing bowl add the cheese, 1tsp ginger garlic paste (Amazon has it or you can make your own), one egg, half a cup flour (I use Besan, chickpea flour because it makes a less thick batter) and a teaspoon of salt. Mix well. Heat a few tablespoons of oil until you can throw in a cumin or mustard seed and it cracks. Stir in the cheese, lower heat to medium high and flip once you can smell the batter, should be lightly browned. Cook all sides well. Move to bowl. Heat more oil and put in a large diced yellow onion (when I say large I mean really big, like 2 cups choppped). Stir till it just starts to get translucent, couple min. Add in 2 diced peppers, variety depending on your heat tolerance. (I use Serrano but I'm crazy) Stir for a little bit till peppers soften. Add 1 tablespoon of soy sauce, 2 of white vinegar, 1/2 teaspoon tumeric, 1 teaspoon salt (optional) and 1/4th a teaspoon ajinomoto (optional) and fold in the cheese. Stir till well mixed and even color. Remove from heat. Garnish with green onion to taste, cilantro to taste, and dash of red pepper flake to taste
