Pohe - Flattened Rice for Breakfast =================================== Serves 4 From the book: From Mom with Love Prep time: 15 mins Cook time: 15 mins INGREDIENTS: 2 cups flattened rice 4 tbsp oil 1/2 tsp mustard seeds 5 to 6 curry leaves (karhi patta) (we substituted dal curry powder) 1 small onion, finely chopped 1 small green chili, chopped 1/4 tsp turmeric powder 1/2 tsp salt 1 small potato, boiled and cut into cubes 1/4 cup peas, thawed if frozen 2 tbsp lemon juice 1/4 tsp red chili powder 2 tbsp cilantro, chopped METHOD: Put flattened rice in strainer and wash under running water until it is soaked (do not over soak). Leave in strainer for draining for 10 minutes. Heat oil in frying pan over medium-high heat. Add mustard seeds and curry leaves. When seeds start to pop, add onions, green chili, turmeric powder, salt, potatoes, and peas. Cover and cook for 3 minutes (so potatoes are soft but not browned). Add flattened rice, cook for 2 to 3 minutes, stirring occasionally (taking care not to break grains). Add lemon juice and red chili powder. Cover and reduce to low heat for 2 to 3 minutes. Turn off heat and leave frying pan covered for another 5 minutes. Before serving, garnish with cilantro. Good with coffee or masala chai. Lemon pickle goes well with it.
