If something in the kitchen doesn't work exactly right, ok, there's probably some mechanical thing that just wore out. But when it's something like my laptop not connecting to the wifi and being powerless to fix it (probably just needed a router reset, but I can't do that when it's not my router and no one else is having problems), that just bothers me to no end. Another one: my car key battery is almost dead which makes it hard to get in the car sometimes. Sure, it just means that I need to have a little patience, but it's still hard to deal with because _sometimes I just want to get in my car without incident_. I guess that's the price I pay when I don't need real keys to use my car 99% of the time. We had my fiance's sister over last night. She was very upset at her boyfriend, and understandably so, but that's not my story to share. What I will share is that I'm very thankful that my fiance and I have never been that angry at one another. There's something to be said about two people just trying to get along and being easy-going people and what that has for levels of stress. Work is stressful. Driving is stressful. But being with her is not. Life is too short to be angry, as I see it. (Clearly, malfunctioning technology is the exception to that and is worthy of anger. From a high level it's: make a roux, add cheese, and add noodles. Recipe: Homemade Mac and Cheese While most of this happens, boil some elbow macaroni noodles and strain them [1]. Heat up a large cast iron pan. Add about 3 tbsp of butter [2]. Once melted and starting to brown, add 1/4 cup of flour and stir constantly to keep from burning it. Once the flour becomes a thick paste [3], add 1 cup of heavy whipping cream and 1 cup of whole milk and stir until well mixed. It starts out very soupy but will eventually become mixed together. Add a block of colby jack cheese, diced into small pieces and keep mixing away until melted. Add the drained noodles to this pan and mix until combined. For extra cheesiness: sprinkle cheddar cheese on top and bake for a few minutes in the oven. [1]: Not sure exactly how much I added. It's roughly half a box of noodles, where a "box" is whatever size Kroger sells. [2]: I used some fancy French butter I found and cut a 1cm x 4 cm x 1.5 cm piece, which I'm guessing is roughly 3 tbsp. [3]: I think there's a sweet spot where it is easy to mix together and combine.
