Hot Skillet Cornbread 2 C cornmeal 1 t baking soda 1 t salt 1 T honey 2 eggs 2 C buttermilk 1/2 stick butter 1. Preheat oven and 12-inch skillet to 425 degrees. 2. Mix dry ingredients. 3. Whisk together eggs and buttermilk. Mix into dry ingredients. 4. Remove skillet from oven and swirl butter around, insuring that sides and bottom are thoroughly coated. 5. Pour in batter and bake for 20-25 minutes, or until golden. Note: If you want to mix things up a bit, adding corn kernels, chopped jalapenos or green chilis, chopped green onions, herbs or anything else you like is a good way to add a little something extra to this recipe.
