Refried beans are one of those foods I like that I can't buy locally. Thankfully, they're pretty easy to make. 1 can black beans or pinto beans, drained (you could cook your own beans too of course) 1/2 white onion, finely chopped 1/2 tsp cumin powder 1/4 tsp chilli powder 1/2 tsp salt canola oil a few drops of lime juice (You can easily double the recipe if you want.) Heat the oil in a large skillet. Add the spices. Once they begin to bubble, add the onion and fry on medium heat for about a minute. Add the beans and continue to fry for five minutes, adding more oil if necessary. Remove from heat, add lime juice, and mash the beans with a potato masher. Best served fresh but will keep fine in the fridge for a few days.
