---------- Recipe via Meal-Master (tm) v8.05 Title: Apricot-Cardamom Bars Categories: Cookies Yield: 24 servings 1 c All-purpose flour 1/2 c Brown sugar, packed 1/2 ts Baking powder 1/4 ts Baking soda 1/4 ts Ground cardamom; see note 1/2 c Apricot nectar 1/4 c Unsweetened applesauce 2 tb Vegetable oil 1 Egg; slightly beaten 1/2 c Dried apricots; finely -chopped Apricot icing: 1/2 c Powdered sugar 3 ts Apricot nectar Recipe by: Better Homes & Gardens, January 1994 Preheat oven to 350 degrees. In a medium bowl, stir together flour, brown sugar, baking powder, baking soda, and cardamom; set aside. In a small bowl, stir together apricot nectar, applesauce, oil and egg until combined. Add to dry ingredients, stirring just until combined. Stir in apricots. Spread batter in an ungreased 11 x 7 x 1 1/2-inch baking dish. Bake for about 25 minutes, or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack. Drizzle with Apricot Icing. Cut into bars. For Apricot Icing, in a small bowl, stir together powdered sugar and enough apricot nectar to make a glaze. NOTES : Substitute 1/8 teaspoon ground cloves, if desired. -----
