                            SOFT SUGAR COOKIES

   1      cup           vegetable shortening
   1 1/2  cups          sugar
   2                    eggs
   1      teaspoon      vanilla
   3 1/4  cups          flour
   2      teaspoons     baking powder
     1/2  teaspoon      salt
   1      cup           buttermilk
                        granulated sugar

Cream shortening, sugar, eggs and vanilla together until fluffy. In separate
bowl shift together the dry ingredients. Alternately add dry ingredients and
buttermilk to creamed mixture.  Drop by heaping teaspoonfuls onto greased and
floured (or parchment lined) cookie sheets. Bake 12-15 mins. in 375 degree
oven. (Bottoms should be lightly browned. Tops remain light) Cool on rack.
Sprinkle with granulated sugar.
