* Exported from MasterCook * Grasshopper Pie Recipe By : Sharon Frye Serving Size : 1 Preparation Time :0:00 Categories : Alcohol Desserts Pie Pies & Pastry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 prepared chocolate cookie crumb crust 1 Pkg. miniature marshmallows -- (10 1/2 oz) 1/4 Cup green creme de menthe 2 Cups whipping cream -- whipped and sweetened to taste -- (I use an 8 oz container Cool Whip, instead) 1. Microwave marshmallows and creme de menthe in large mocrowave-safe bowl on high for 1-2 minutes. Stir until smooth. Refrigerate for about 20 minutes, or until slightly thickened. (It may take less time...never more...) 2. Fold in whipped cream. Spoon into prepared crust. Freeze until firm, about 3-4 hours. 3. Set out of the freezer about 15 minutes before serving to allow time to soften. Notes: This tastes best if real whipping cream is used, but I usually opt for cool whip because of calories and cholesterol (hubby's heart condition...) This freezes well for several months. During the summer I usually have 3-4 such "freezer" pies on hand for emergencies, unexpected company, or days I just don't feel like cooking. - - - - - - - - - - - - - - - - - -
