* Exported from MasterCook * Mincemeat-Pumpkin Pie Recipe By : Judy Ryder Serving Size : 6 Preparation Time :0:00 Categories : Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Cup Pumpkin -- Mashed, Canned 1/2 Cup Brown Sugar -- Firmly Packed 3/4 Teaspoon Cinnamon -- Ground 3/4 Teaspoon Nutmeg -- Ground 1/2 Teaspoon Salt 3 Eggs -- Lg 1/2 Cup Heavy Cream 1 Cup Mincemeat -- Prepared 1 Unbaked 9-inch Pie Shell Combine the pumpkin, brown sugar, cinnamon, nutmeg and salt in a bowl, mixin g well. Add the eggs and heavy cream. Beat until smooth using a rotary or el ectric mixer. Stir in the mincemeat and pour into the unbaked pie shell. Bak e in a preheated 425 degree F. oven for 35 minutes or until the filling is set . Cool slightly on a wire rack and serve warm. Judy's Note: I use evaporated skim milk instead of the cream.
