* Exported from MasterCook * Cashew Brittle Recipe By : Jo Anne Merrill Serving Size : 10 Preparation Time :0:00 Categories : Candies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Cups sugar 1 Cup corn syrup, light 1 Cup butter 1/2 Cup water 3 Cups cashews -- Chopped 1 1/2 Teaspoons baking soda -- sifted 1-Butter 2 large baking sheets; set aside. 2-In a saucepan, combine sugar, corn syrup, butter and water. cook over medium-high heat to boiling; stirring constantly to dissolve sugar. Cook, stirring constantly, to soft crack stage. Stir in chopped cashews and continue cooking, stirring frequently, to hard crack stage. 3-Remove from heat; quickly sprinkle in sifted baking soda over mixture, stirring constantly.
