---------- Recipe via Meal-Master (tm) v8.05 Title: Coconut Snowballs Categories: Desserts, Christmas Yield: 12 Servings 2 c Flaked coconut 1 Half-gallon ice cream Line 12 medium muffin cups, 2 1/2 x 1 1/4 inches, with paper or foil baking cups. Spread coconut in shallow pan or on plate. Scoop ice cream into 12 balls. Roll each in coconut, using 2 forks. Place balls in muffin cups. Freeze uncovered at least 3 hours until firm. Wrap, label and return to freezer. Store up to 2 weeks. *Serve frozen in paper baking cups. *Tinted Coconut Snowballs: Shake coconut and 4 drops red or green food color in tightly covered container until coconut is evenly tinted.
