MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Creole For Two Categories: Poultry, Vegetables, Herbs, Mushrooms, Chilies Yield: 2 servings 1/2 lb Boned, skinned chicken; - diced 1 ts Oil; divided 1/2 c Green pepper; chopped 1/4 c Onion; thinly sliced 1/4 c Celery; chopped 1 cl Garlic; minced 3/4 c Fresh mushrooms; sliced 3/4 c Undrained diced tomatoes 2 tb Chicken broth 1 1/2 ts Fresh oregano; minced -OR- 1/2 ts Dried oregano 1 1/2 ts Lemon juice 3/4 ts Fresh basil; minced -OR- 1/4 ts Dried basil 1/8 ts Salt 1/8 ts Pepper 1/8 ts Crushed red pepper flakes Hot cooked rice Fresh parsley; minced (optional) In a Dutch oven, cook chicken in 1/2 ts oil over medium-high heat until no longer pink, 6-8 minutes. Remove; set aside. In same pan, cook green peppers, onion, celery, and garlic in remaining 1/2 ts oil until tender, 5-7 minutes. Add mushrooms; cook until liquid has evaporated. Stir in tomatoes, broth, oregano, lemon juice, basil, and seasonings. Bring to a boil. Reduce heat; cook, covered, until slightly thickened and flavors are blended, 5-10 minutes.
