MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Split Pea Dip Categories: Dips, Greek Yield: 1 Batch 1 c Yellow split peas; heaping 2 sm Onions; one chopped coarsely -and the other finely 1 cl Garlic; chopped coarsely 6 tb Extra-virgin olive oil 1 tb Fresh oregano; chopped Salt and pepper Pita bread; warm, to serve Rise the split peas under cold running water. Put in pan and add the coarsely chopped onion, the garlic, and plenty of cold water. Bring to a boil then simmer for about 45 minutes, until very tender. Drain the split peas, reserving a little of the cooking liquid, and put in a food processor. Add 5 tablespoons of the olive oil and blend until smooth. If the mixture seems too dry, add enough of the reserved liquid to form a smooth, thich puree. Add the oregano and season with salt and pepper. Pour the mixture into a serving bowl and sprinkle with the finely chopped onion and extra oregano if desired. Drizzle over the remaining olive oil. Serve warm or cold with pita bread.
