MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Hearty Chicken Gyros Categories: Poultry, Cheese, Breads, Dairy, Vegetables Yield: 6 servings 1 1/2 lb Boned, skinned chicken; in - 1/2" cubes 1/2 c Lemon-pepper marinade 3 tb Fresh mint; minced MMMMM---------------------------SAUCE-------------------------------- 1/2 c Plain Greek yogurt 2 tb Lemon juice 1 ts Dill weed 1/2 ts Garlic powder MMMMM--------------------------ASSEMBLY------------------------------- 1 md Cucumber; seeded, chopped 1 md Tomato; chopped 1/4 c Onion; fine chopped 6 Whole wheat pita pocket - halves; warmed 1/3 c Feta cheese; crumbled Place chicken, marinade, and mint in a shallow dish and turn to coat. Cover and refrigerate up to 6 hours. Drain chicken, discarding marinade. Place a large nonstick skillet over medium-high heat. Add chicken; cook and stir until no longer pink, 4-6 minutes. In a small bowl, mix sauce ingredients. In another bowl, combine cucumber, tomato, and onion. Serve chicken in pita pockets with sauce, vegetable mixture, and cheese.
