MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Greek Tortellini Skillet Categories: Pasta, Squash, Vegetables, Sauces, Cheese Yield: 6 servings 19 oz Bag frozen cheese - tortellini 1 lb Ground beef 1 md Zucchini; sliced 1 sm Red onion; chopped 3 c Marinara or spaghetti sauce 1/2 c Water 1/4 ts Pepper 2 md Tomatoes; chopped 1/2 c Feta cheese; diced 1/2 c Greek olives; pitted, halved 2 tb Fresh basil; minced, divided Cook tortellini according to package directions. Meanwhile, in a large skillet, cook the beef, zucchini, and onion over medium heat until meat is no longer pink; crumble beef; drain. Drain tortellini; add to skillet. Stir in the marinara sauce, water, and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Add the tomatoes, cheese, olives, and 1 tb basil. Sprinkle with remaining basil.
