MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chicken Tzatziki Categories: Poultry, . squash, Dairy, Herbs, Cheese Yield: 4 servings 1 1/2 c English cucumber; peeled, - finely chopped 1 c Plain Greek yogurt 2 cl Garlic; minced 1 1/2 ts Fresh dill; chopped 1 1/2 ts Olive oil 1/8 ts Salt MMMMM--------------------------CHICKEN------------------------------- 2/3 c A-P flour 1 ts Salt 1 ts Pepper 1/4 ts Baking powder 1 lg Egg 1/3 c Milk 4 Chicken breast halves - (6 oz ea); boned, skinned 1/4 c Oil 1/4 c Feta cheese; crumbled Lemon wedges (optional) For sauce, mix the first 6 ingredients; refrigerate until serving. In a shallow bowl, whisk together flour, salt, pepper, and baking powder. In another bowl, whisk together egg and milk. Pound chicken breasts with a meat mallet to 1/2" thickness. Dip in flour mixture to coat both sides; shake off excess. Dip in egg mixture, then again in flour mixture. In a large skillet, heat oil over medium heat. Cook chicken until golden brown and juices run clear, 5 to 7 minutes per side. Top with cheese. Serve with sauce and, if desired, additional fresh dill and lemon wedges.
