      Title: Dad's Greek Salad
 Categories: Vegetables, Herbs, Cheese
      Yield: 8 servings
 
      4 lg Tomatoes; seeded, coarse
           - chopped
  2 1/2 c  English cucumbers;
           - thin sliced
      1 sm Red onion; halved,
           - thin sliced
    1/4 c  Olive oil
      3 tb Red wine vinegar
    1/4 ts Salt
    1/8 ts Pepper
    1/4 ts Dried oregano
    3/4 c  Greek olives; pitted
    3/4 c  Feta cheese; crumbled
 
  Place tomatoes, cucumbers, and onion in a large bowl. In a small
  bowl, whisk oil, vinegar, salt, and pepper and, if desired, oregano
  until blended. Drizzle over salad; toss to coat. Top with olives
  and cheese.
