MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Tzatziki (Cucumber Yogurt Dip) Categories: Squash, Dairy, Herbs, Vegetables Yield: 2 Cups 1/2 lg English cucumber; peeled 1 tb Kosher salt 2 c Plain full-fat Greek yogurt 3 tb Fine chopped dill 2 tb Fine chopped mint 1 tb Fresh lemon juice 2 cl Garlic; mashed to a paste 1 sm Shallot; fine chopped Fresh ground black pepper 2 tb Olive oil Paprika: garnish Grate cucumber using the large holes of a box grater; transfer to a fine-mesh strainer set over a bowl. Toss cucumber with 1 tbsp. salt; let sit 10 minutes. Squeeze excess water from cucumber and transfer to a bowl. Stir in yogurt, dill, mint, lemon juice, garlic paste, shallot, salt, and pepper; drizzle with oil and sprinkle with paprika to garnish.
