* Exported from MasterCook * Greek Salad Recipe By : Sharon & Larry Beck Serving Size : 12 Preparation Time :0:00 Categories : Pasta Salads And Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds bow tie noodles 3 pints cherry tomatoes -- seeded and halved 1 1/2 pounds feta cheese -- * see note 1 1/2 cans black olives -- slices 10 ounces spinach -- torn 2 cups olive oil 1 teaspoon garlic -- minced 1 lemon -- juiced 1/2 cup red wine vinegar oregano -- to taste salt and pepper -- to t Cook Bow Ties according to package directions, drain and cool. Whisk together olive oil, garlic, lemon juice & vinegar until slightly thickened. Mix into pasta. Slice black olives, halve cherry tomatoes, and tear spinach into bite-sized pieces. Add to pasta mixture. Crumble Feta cheese into salad and mix gently. Add oregano, salt and pepper to taste.Makes 12 pounds. Recipe may be reduced.
