* Exported from MasterCook * Couscous Primavera Recipe By : Cooking Live Show #CL8924 Serving Size : 1 Preparation Time :0:00 Categories : Cooking Live Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 tablespoon extra virgin olive oil 1 garlic clove -- pressed or minced 1 1/2 cup chopped onion 2 cups sliced mushrooms 2 cups grated carrots 1/4 teaspoon salt 1/2 teaspoon freshly ground black pepper 3/4 teaspoons dried oregano -- crushed 1 cup diced plum tomatoes 3 cups fat free or lowfat milk 1 cup dry couscous 1 cup grated fresh parmesan cheese 1/4 cup fresh basil leaves -- chopped, optional In a saucepan, combine the olive oil and garlic and cook over medium heat until the garlic starts to sizzle. Add the onion, mushrooms, carrots, salt, pepper and oregano and continue to cook, stirring frequently, until the onion is soft and translucent. Add the tomatoes and milk and bring to a boil. Stir in the couscous. Remove from the heat and cover tightly. Allow to stand for 5 minutes. Uncover and stir in the Parmesan cheese. Serve immediately.
