* Exported from MasterCook II * Red Beans And Rice Recipe By : Kathy Ingersoll Serving Size : 8 Preparation Time :0:45 Categories : Bean Dishes Crockpot Recipes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 C Dried Kidney Beans -- soaked overnight 6 C Water 1/2 Tsp Pepper 1/2 Tsp Salt 2 Stalks Celery -- chopped 2 Med Onion -- diced 1/2 C Parsley -- chopped 4 Cloves Garlic -- minced dash Hot Pepper Sauce 2 C Vegetable Broth -- (1cube in 2c.hot H2O 8 C Cooked Brown Rice In a large pot, bring 2 cups water to a boil. Add pepper,, celery, onion, parsley, garlic and hot pepper sauce. Stir in vegetable broth. Bring to a boil, simmer, covered for 30 minutes. Add remaining 4 cups of waster. Bring to a boil. Add drained beans, bring to boil, cover, reduce heat an d simmer, stirring occasionally, for 2 1/2 hours or until beans have made a thick bubbly, brick colored broth. Add salt.
