* Exported from MasterCook * Quinoa Pilaf Recipe By : Steven Raichlen for Prevention (Oct/96) Serving Size : 4 Preparation Time :0:40 Categories : Casserole Vegetable Entree Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cup quinoa 1 1/2 tablespoons extra virgin olive oil 1 medium onion -- chopped 2 cloves garlic -- minced 1/4 cup pine nuts 2 red bell peppers -- diced 1 medium sweet potato -- cubed 1/4 cup golden raisins 4 cups venerable broth ground black pepper Rinse quinoa with cold water and drain well. Heat oil in a large non-stick frying pan. Add onion, garlic, pine nuts and pepp ers and cook over medium heat until lightly browned, about 5 minutes. Add potat o, raisins and quinoa and cook for 1 minute. Stir in broth and black pepper; bring to a boil. Reduce heat to low, cover and simmer until liquid is absorbed and quinoa is tender, 15 to 20 min. Fluff quin oa mixture with a fork and serve at once. Serves 4. Makes 11 cups.
