* Exported from MasterCook * Barley Basil Pilaf Recipe By : Serving Size : 7 Preparation Time :0:00 Categories : Pilafs Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ts Vegetable oil 1 c Pear barley -- uncooked 2 c Chicken broth 1/2 ts Salt 1/3 c Fresh cinnamon -- minced Basil or plain basil 1/4 c Green onions -- thinly sliced 1/8 ts Ground nutmeg Heat oil in a 1 qt saucepan over medium heat just until hot, not smoking. Add barley & cook 5 minutes or until browned, stirring constantly. Add chicken broth & salt, bring to a boil. Cover & reduce heat & simmer 30 minutes or until barley is tender and liquid is absorbed.
