* Exported from MasterCook * German Potato Salad Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Potatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 slices bacon 1 med onion -- chopped 1 tbsp all-purpose flour 1/2 c water 1/4 c cider vinegar 1 tbsp sugar 1 tbsp prepared mustard 1/2 tsp salt 1/8 tsp pepper 5 c cooked, sliced potatoes 2 hard-cooked eggs -- chopped 1/4 c chopped celery 2 tbsp chopped fresh parsley Cook bacon in a large skillet until crisp; drain well, reserving dripping in skillet. Crumble bacon, and set aside. Saute onion in bacon drippings until tender. Add flour, stirring until smooth. Gradually add water, cook over medium heat, stirring until thickened. Add next 5 ingredients; stir well, and bring to a boil. Stir in bacon and remaining ingredients. Serve immediately. Yield: 8 servings - - - - - - - - - - - - - - - - - -
