German Potato Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 lb Red potatoes -- cooked with - skins on 5 Celery ribs -- chopped 1 lg Onion -- chopped 3/4 lb Bacon -- cut in pieces 3/4 c White vinegar 2 c Water 1 c Sugar 1/3 c Bacon grease 2 tb All-purpose flour 1/2 ts Salt 1/4 ts Pepper 2 ts Salt -- added to hot - potatoes While potatoes are cooking, chop celery and set aside. Chop onions and set aside. Fry bacon, chop in to small pieces and set aside. Remove bacon from grease, add onions to grease and saute. Remove onions from grease and remove grease from pan. Re-add 1/3 c grease to pan. Add flour and brown slightly. Add vinegar, water, salt, sugar, and pepper. Cook until clear. Peel potatoes and cut into slices while still hot. Add 2 ts salt to hot peeled potatoes. Add onion, celery, bacon, and sauce to potatoes. Let stand for several hours to let flavors blend. Decorate with bacon or parsley or whatever.
