Put rice into a heavy-bottomed saucepan with water, salt and saffron. Bring to boil, the cover and turn heat to low. Cook for 40-45 minutes until rice is tender and water is absorbed. Remove from heat and leave cover on for 5 minutes. Fluff rice gently with a fork.
