* Exported from MasterCook II * Rice Dumplings Recipe By : Creole Origins Serving Size : 1 Preparation Time :0:00 Categories : Dumplings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup flour 8 firm tart apples sugar and cinnamon to taste 1/2 teaspoon grated nutmeg 3 cups ground rice 2 qts milk 2 tablespoons grated orange peel 1/2 teaspoon salt Pare and core apples. Mix ground cinnamon and sugar and fill apples with this mixture. Boil rice and salt in milk until it becomes thick and gummy. Add grated orange peel, nutmeg and flour. Remove from heat and cool. Cover each apple with thick coating of rice. Tie each dumpling tightly in a cloth. put in pot of cold water. Bring water to boil; boil apples for 3/4 hour. When done, untie cloth and place dumplings on large dish. Sprinkle with nutmeg, dot with butter and place in over for 5 to 10 minutes to brown.
