* Exported from MasterCook * BEEFY SPANISH RICE Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Spanish Holidays Side Dish Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 c Plus 2 tb Chopped green pepper 2 tb Chopped celery 1 Pound ground beef 1 Cl Garlic, crushed 1 1/2 tb Vegetable oil 14 1/2 oz Can whole tomatoes Undrained and chopped 1/4 c Tomato sauce 3/4 c Uncooked long-grain rice 1 Bay leaf Dash of red pepper 1/2 ts Beef-flavored bouillon Granules 1/2 c Boiling water 1 t Chili powder 1/2 teaspoon sugar Saute first 4 ingredients in hot oil in a large skillet until tender; drain.Drain tomatoes, reserving liquid. Add enough water to tomato liquid to measure 1 cup. Add tomatoes, tomato liquid, tomato sauce, rice, bay leaf, and red pepper to beef mixture, stirring well. Bring mixture to a boil; cover, reduce heat, and simmer 10 minutes. Dissolve bouillon granules in boiling water; add to rice mixture. Stir in remaining ingredients. Spoon into an 8-inch square baking dish. Cover and bake at 350 degrees for 35 minutes. Remove bay leaf. Yield: 4 to 6 servings. - - - - - - - - - - - - - - - - - -
