* Exported from MasterCook * Green Rice Recipe By : Katrina Benson's grandmother, Ruby Phillips Serving Size : 8 Preparation Time :0:45 Categories : Rice/Grains/Beans/Polentas Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 stick butter 3 cups cooked white rice 1 cup Cheddar cheese -- grated 1 tablespoon onion -- grated 1 8 oz pkg broccoli florets -- thawed 1 sm can evaporated milk 1 can cream of mushroom soup, condensed Additional grated Cheddar cheese -- for topping Preheat oven to 350 degrees F. Melt butter in an ovenproof 8"x8" casserole dish and set aside. Combine onion and broccoli in a small saucepan with a small amount of water and cook until just cooked. Combine all ingredients and blend well; spread in casserole dish and top with additional Cheddar cheese, as desired. Bake for 10 to 15 minutes or until heated through.
