MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Caprese Pasta Salad Categories: Pasta, Vegetables, Cheese, Herbs, Citrus Yield: 17 servings 16 oz Penne pasta 2 lb Heirloom tomatoes; seeded, - chopped 3/4 lb Fresh mozzarella cheese; in - 1/2" pieces 1/2 c Basil leaves; loose packed, - chopped 1/3 c Olive oil 1/4 c Lemon juice 1 Shallot; fine chopped 1 cl Garlic; minced 1 ts Sugar 3/4 ts Salt 1/2 ts Lemon zest; grated 1/4 ts Pepper Cook pasta according to package directions. Drain and rinse in cold water. Transfer to a large bowl. Gently stir in the tomatoes, cheese, and basil. In a small bowl, whisk the remaining ingredients. Drizzle over salad and toss to coat.
