* Exported from MasterCook * Cold Chicken Salad Recipe By : Pat Eyler ncar.UCAR.EDU!bcstec!sleepy!cmips3!cmis10!eyler Serving Size : 0 Preparation Time :0:00 Categories : Beverages Sauces And Preserves Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups oriental noodles (glass noodles or ramen) 1-1/2 cups roast chicken breast cut into 1 cm pieces 1-1/2 cups mixed sliced veggies (see below) raw 1/2 cup peanuts 55 ml water 15 ml Soy sauce 30 ml peanut butter (use creamy) 15 ml red chili and garlic paste 1. Prepare noodles, and add peanut sauce (below) and mix by hand to cover noodles. 2. Form the noodles into a bed on the serving dish and sprinkle over the top, chicken and vegetables to taste (I enjoy fresh mushrooms, broccoli flowerettes, and matchsticked carrots and zucchini. Top with peanuts. Peanut Sauce: 1. Mix ingredients together to form a thin emulsion. Author's Notes: The cold chicken salad that I've seen/tried/loved, goes something like this: Play with the measurements, I'm guesstimating what I use (a handful of this and a jot of that...)
