* Exported from MasterCook * Caribbean Turkey Rice Salad Recipe By : Louis Rich recipe Serving Size : 10 Preparation Time :0:00 Categories : Fruit Nuts Poultry Rice Salads - Main Dish Salad Dressings Tomatoes Turkey Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package oven roasted or hickory smoked turkey -- about 1 1/2 pound breast 3 cups cooked rice -- chilled 1 large tomato -- chopped 3/4 cup celery -- diag. cut 3/4 cup golden raisins 1/3 cup salted peanuts -- chopped DRESSING: 1/2 cup oil 3 tablespoons curry powder 4 teaspoons curry powder 3/4 teaspoon dry mustard 3/4 teaspoon onion salt or garlic salt 1/4 to 1/2 tsp. Tabasco sauce Cut turkey into 1/2" cubes. Place in a large bowl with all other salad ingredients, except peanuts. Stir together dressing ingredients and pour over turkey mixture. Mix well.
