* Exported from MasterCook * Stuffed Eggplant Recipe By : Turkish Recipe from Barb Ataman Serving Size : 4 Preparation Time :0:00 Categories : Cheese Eggplant Ground Beef Main Dishes Mushrooms Onions Middle East Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound ground beef -- or ground turkey 1 small onion -- chopped 1/2 green pepper -- chopped 1 medium eggplant 1/4 pound mushrooms -- chopped 1 to 2 chopped tomatoes -- + liquid/can be can salt and pepper -- to taste 1 dash cumin grated Mozzarella cheese -- optional Brown ground beef. Add onion, green pepper and chopped center scooped out of eggplant after cutting in half lengthwise. Salt rest of eggplant and reserve. Add mushrooms, tomatoes and seasonings. Cook until part of liquid is evaporated. Meanwhile, Microwave eggplant halves on High for 2-4 minutes. Stuff eggplant with meat mixture. Put any extra filling in bottom of pan. Bake at 350 for 1-1 1/2 hours until tender or Microwave on Medium for 15 minutes. Can top with grated Mozzarella cheese during last few minutes.
