* Exported from MasterCook * Squash-Stuffed Tomatoes Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Tomatoes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Medium tomatoes 2 zucchini -- grated (about 2 c.) 1/3 C. chopped onion 1 C. shredded Swiss or Gruyere cheese 3/4 Tsp. salt -- divided 1/4 Tsp. black pepper 1/4 Tsp. dried basil Wash tomatoes. Cut off slice at stem end and scoop out centers with spoon; reserve pulp. Drain juices from pulp. Sprinkle inside of tomato shells with 1/2 teaspoon salt. Turn upside down on plate and let stand 30 minutes; pat dry. Combine drained tomato pulp, zucchini, onion, cheese, remaining salt, pepper and basil in medium bowl. Let stand 30 minutes. Drain and pat dry. Place tomatoes on baking sheet. Fill with zucchini mixture. Bake in 350 degrees oven for 10 minutes or until tomatoes are just tender. Serves 4. - - - - - - - - - - - - - - - - - -
